Week 16
3:44 PMSince my last post...
- We had our 4 month appointment. Baby's heart is beating at a strong 140 beats per minute.
- We find out the baby's gender on July 26th at 10am!
- I lost 1.5lbs of the 2 I gained...still can't figure that one out as I'm always chewing on something. Even Jon comments on my ability to eat the entire contents of the fruit bowl in 2 days.
- I love ice cream...very much. I would like to personally thank the person who invented it...
- After our doctor's appointment this morning, the two "yuppies" did something they never thought they would...we toured a child care facility. Little Nameless Addington is now enrolled in a child program that will introduce them to french, sign language and all sort of fun activities that will broaden her/his horizons so that s/he is ready to become President when the time comes :) No pressure little one....no excuses either.
- With this being my first pregnancy (and Jon agreeing the carry any others after this... :) ) I am very in tune with changes and I'm amazed how each day my stomach feels so much heavier. I really notice when I turn over in bed...it takes just a little more effort and momentum. This is the prep for the big huge belly still to come.
- We have officially started on the baby's room! Takes a minute to get up the courage to change the workout room to something completely different...i.e. a baby room. Out goes the treadmill, workout bench, weights...in comes the crib, changing table, glider. The two boys (yorkies) are feeling displaced as that was their "bedroom"...now we have to find a new space in the house for them.
- Best moment of the past 7 days - sharing the baby's movement with Jon {love love}. As the baby can sense light my pregnancy book suggested we chase the baby around my belly with the flashlight...so we did :) Jon felt some good "strong" movement. Then two nights ago at 2am the baby woke me up doing flick flacks, jump jacks and cartwheels. Retaliation? Perhaps :)
- This week the baby also started hearing. While s/he can't hear us clearly, s/he can still hear sound. I bet the 4th of July fireworks sounded pretty darn awesome from the safe surround of amniotic fluid.
- I went shopping - bought more outfits, gadgets, blankies etc to equipt us for the arrival of a small person. Still can't decide on a crib. Do we want the crib changer combo or the crib changer separate??? I like both.
You can't tell in the belly picture, but in the sky loomed HUGE severe thunderstorm clouds. Nor can you tell from this picture that it was 99 deg. Fahrenheit. I braved both to capture a 16 week picture...not even 10 minutes later we got hit by a huge wind and rain storm. Whoa mama!!

So lets whip up some Guacamole dip to celebrate!
Perfect Guacamole Recipe
INGREDIENTS
- 2 ripe avocados
- 1/2 red onion, minced (about 1/2 cup)
- 1-2 serrano chiles, stems and seeds removed, minced
- 2 tablespoons cilantro leaves, finely chopped
- 1 tablespoon of fresh lime or lemon juice
- 1/2 teaspoon coarse salt
- A dash of freshly grated black pepper
- 1/2 ripe tomato, seeds and pulp removed, chopped
Garnish with red radishes or jicama. Serve with tortilla chips.
METHOD
1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)
2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.
Keep the tomatoes separate until ready to serve.
Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.
3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.
4 Just before serving, add the chopped tomato to the guacamole and mix.
Variations
For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados.
You don't need to have tomatoes in your guacamole.
To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guacamole with a little cottage cheese added to it is my favorite.
Yield: Serves 2-4.
